White wine reduces down to a very flavorful sauce that goes as a perfect accompaniment for fish, chicken, or pasta. Try this recipe for a white wine and cream sauce:

Melt 3 tablespoons of butter in a sauté pan. Once melted, add two chopped shallots and two crushed cloves of garlic, and fry for 2-3 minutes or until lightly browned. Add 7 ounces of white wine and 7 ounces of stock (this can be chicken or fish stock). Bring mixture to a boil and cook until the volume of liquid has reduced by half. Remove pan from heat and add 7 ounces of cream, stir to mix. To finish, add chopped fresh tomato, chives, or parsley, as desired.

Add 1 large Portobello mushroom (chopped) and continue until soft, then season vegetable mixture with salt and pepper to taste. Add 4 ounces of white wine and simmer until liquid is reduced by half. Add 7 ounces of chicken or vegetable stock and continue to simmer for 5 minutes. Add 2 ounces of cream and mix well, then top with chopped parsley.

When cooking meats in the oven, add a generous portion of white wine to the roasting pot to get a moist, juicy product and plenty of sauce for serving. Try this recipe for baked fish:

Place a two-pound filet of white fish such as cod or halibut in a roasting pan. Add 1 cup of wine to the pot, or until liquid reaches halfway up the sides of the fish. Toss around the fish your favorite chopped vegetables, such as carrot, celery, or broccoli. Drizzle with the juice from 1 lemon and 1 tablespoon of olive oil.
