Fiber-rich lunch ideas

Most people - especially kids - do not get enough fiber in their daily diet. Fiber is very important for your digestive functions, so it is very important that you get the right amount of it. If not, you could end up constipated or with all kinds of other digestive issues. It will allow your food to be moved smoothly through your digestive tract, keeping you healthy.

One of the best times of day to get your fiber is at lunch time. Here are some ideas for fiber-filled items that you can pack for your lunch or for your kid's lunch.

Trail Mix

Trail mix is something easy to make on your own. You can mix together dried fruit, nuts, seeds, and even a bit of dark chocolate, along with cereals that are high in fiber. Just make sure this snack is mostly nuts and cereal, and not so much chocolate because it has more sugar than fiber.

This is also a great snack for your kids to make with you if they want to take it for lunch, too! Just set out the ingredients and have them mix it together in individual baggies or containers.

Fruits and Veggies

Most fruits and veggies are very high in fiber. Pack some fresh fruits and vegetables in your lunch daily.

Alternatively, you could make a vegetable stir fry. Sautee some zucchini, broccoli florets, carrots, and snap peas with a bit of olive oil, and mix in some cooked brown rice and soy sauce for a fiber-filled lunch that is super easy to make.

Apple with peanut butter

This might sound like food for kids, but it is a delicious alternative that is super good for you and packs a lot of fiber. Have an apple with two tablespoons of peanut butter, and you will get in a lot of the fiber that you need for the day, as well as a great source of protein, fats, and various vitamins and minerals.

Pistachios

Pistachios are often called the "skinny nut" because they have tons of fiber and protein but not a lot of calories compared to other nuts. Throw some pistachios in your bag to have for your lunch and you will be getting in tons of fiber.
