Want to try out some new vegetables? Boring with the same old lettuce and tomatoes? There are plenty of vegetables that don't get as much attention as they deserve. Although they may be harder to find, they are worth the search! Here we will list some more uncommon vegetables and how you can cook them and eat them.

New Zealand Spinach

Spinach is one of the healthiest vegetables you can buy, and it's easy to find in early spring. But try to look for fresh spinach past May, and you could come up empty handed. This is a good time to start looking for New Zealand spinach, which can grow in warmer conditions. Also known as "Maori," this kind of spinach will probably start appearing in farmers markets as soon as other spinach goes away. Cook it like regular spinach, and enjoy your spinach for a much longer frame of time!

Garlic scapes

Garlic scapes are long, green sprouts that come out of garlic plants later in their lives. They have a milder flavor than regular garlic, so you can put them in food when you want it to have a slight garlic flavor, but nothing overpowering. If you are a real garlic lover, you could even eat them whole as a snack and not have bad garlic breath for the rest of the day! Cook them the same way you would cook regular garlic and enjoy their mild flavor.

Sea beans

These beans are salty, since they come from the sea! They tend to grow along marshes and seashores. You can eat them in a similar way to how you eat green beans - raw, or blanched to give them a slightly softer and less crunchy texture. These beans might be hard to find, but once you find them it will be worth it. However, due to their growing popularity, they can be a little pricey. Try these beans out once to see if you like them!

Stinging nettle

Stinging nettle is a great remedy for anyone who suffers from seasonal allergies. This plant is loaded with histamines, which will help to build up your immunity to allergies. But a lesser known use for this plant is its spicy quality in food! Use this plant to give a little bit of a kick to your veggies. Sprinkle it over salad, or with some green beans or asparagus to given it a nice little kick. However, make sure you wash it well and use gloves to remove the chemical from it that can sting you.
